Owner Luis Perez created Peels On Wheels in the Summer of 2019. Luis has worked in multiple facets of the restaurant industry for nearly two decades. Many of those years were spent working in the pizza industry. Growing up in the South Bronx pizza was a huge part of daily life for Luis. After a career hiatus from pizza, Luis found himself missing the pizza industry and decided to start his own pizza business.
Luis started with a fully mobile concept where Neapolitan style pizzas were hand stretched, topped and baked in under five minutes directly in front of customers. Luis is well versed in many different styles of pizza and loves sharing his pizza knowledge with others.
Located in Rochester, New York - Peels on Wheels grew in July of 2021 with the opening of the "Pizza Garage". The Pizza Garage now offers New York Style pizza among other delicious offerings for takeout.
We combine traditional methods with non-traditional twists to create one of a kind products that our customers love. Our pizza is inspired by both traditional Neapolitan and New York style pizzas. Traditional Neapolitan pizza is cooked above 800 degrees Fahrenheit in two minutes or less, whereas New York style is baked anywhere from 475-550 degrees Fahrenheit in about 8-12 minutes. The pizza we make at the Pizza Garage falls somewhere between both of those styles. We bake our pizza at 650 degrees Fahrenheit in about 4-6 minutes which creates characteristics consistent with both Neapolitan and New York style pizzas. Quality is of the highest importance when selecting ingredients for our pizza from making our own fresh mozzarella to importing products from Italy. Our mission is to use quality ingredients and source locally whenever possible to provide our customers a unique pizza. Owner Luis Perez spent his early childhood eating pizza from slice shops in New York City and after a trip to Italy, he wanted to create a pizza that offered the best of his own experiences. The Pizza Garage hopes to offer others a similar nostalgic pizza experience!
Luis wanted to bring a piece of the Italian culture to the city of Rochester following a trip to Italy where he fell in love with the common sight of the unique Piaggio Ape vehicle. In fact, Luis decided to import his very own Piaggio Ape P601 from Naples, Italy! Our Ape was customized into an authentic Italian pizza truck and was used for popups in 2020. The unique truck is now on display inside the Pizza Garage.
