Owner Luis Perez created Peels On Wheels in the Summer of 2019. Luis has worked in multiple facets of the restaurant industry in the last fourteen years. Ten out of his fourteen years were spent working in the pizza industry. Growing up in the South Bronx pizza was a huge part of daily life for Luis. After a three year break from pizza, Luis found himself missing the pizza industry and decided to start his own pizza business.
Luis created a fully mobile concept where Neapolitan style pizzas are hand stretched, topped and baked in under five minutes directly in front of customers. Luis is well versed in many different styles of pizza and loves sharing his pizza knowledge with others.
We combine traditional methods with non-traditional twists to create unique and exciting products that our customers love. Our pizza is inspired by traditional Neapolitan pizza which originates from Naples in Southern Italy. Traditional Neapolitan pizza is cooked above 900 degrees Fahrenheit with the use of simple and fresh ingredients: a simple dough, tomatoes, fresh mozzarella, fresh basil and olive oil. From making our own fresh mozzarella to growing our own basil, our mission is to use quality locally sourced ingredients to provide our customers the best pizza experience. Peels On Wheels pizza maintains the integrity of authentic Neapolitan pizza but utilizes non-traditional ingredients.
Luis wanted to bring a piece of the Italian culture to the city of Rochester following a trip to Italy where he fell in love with the common sight of the unique Piaggio Ape vehicle. In fact, Luis decided to import his very own Piaggio Ape P601 from Naples, Italy! Our Ape is being customized into an authentic Italian pizza truck that will offer a variety of styles of pizza. Luis cannot wait to share the authenticity of the Italian culture through his pizza and his one of a kind vehicle with the city of Rochester!
